Vegetable Salad

Ingredients
  • 1 (5 lb.) cabbage, shredded
  • 1 cauliflower
  • 1 lb. baby carrots
  • 1 red bell pepper, cubed
  • 1 green bell pepper, cubed
  • 1 yellow bell pepper, cubed
  • 1 orange bell pepper, cubed
  • 1 can baby corn
  • 2 garlic cloves, minced
  • Marinade:
  • ¾ cup water
  • ½ cup sugar
  • 1 cup vinegar
  • ½ cup oil
  • 2½ tbsp. salt
  • 2-3 bay leaf
  • 10 peppercorns
Instructions
  1. In a sauce pan combine water, sugar, vinegar, oil, salt, bay leaf, and peppercorns. Bring to a boil and cook for about 1 minute. Remove from heat and set aside.
  2. Cut cauliflower into small chunks, cut baby carrots and baby corn into diagonal slices. In a large bowl combine all ingredients and pour in the dressing. Mix well and refrigerate for at least 3 hours before serving. Lasts for at least 1 week in refrigerator.
