We were at my sister in laws house a while back, enjoying a great birthday party. As always, she delivered some amazing and delicious food, honestly the girl is talented! She served this salad and the whole time, my thought process went something like this…
“Keep on walking people, the salad is no good. Eat something else… NO don’t touch the salad! I want it…ALL!”
Between me and my husband we lost count of our seconds, thirds…
So naturally, if I try something and I REALLY, REALLY, REALLY, REALLY like it, I’m going to come home and brainstorm until I figure a way to make the recipe. AND I HAD to make this salad!
It’s so yummy, I still can’t decide if it should be classified as salad or dessert…I’ll let you figure that out!
…and this is why I decided to make candied almonds as well…
Ingredients for Spring Mix Mango Salad
1 sweet onion, sliced into thin rounds
1/2 cup apple cider vinegar
1 tbsp. sugar
1/2 tsp. salt
1 1/4 cup boiled water
10 oz. spring mix
2 ripe mango, peeled and cubed
2 avocado, diced
1 1/2 cup candied almonds
6 oz. Feta cheese
Poppy seed dressing
Slice 1 sweet onion into thin rounds. Place in into a heat proof bowl and add 1/2 cup apple cider vinegar, 1 tablespoon sugar, 1/2 teaspoon salt, and 1 1/4 cup boiled water. Let it sit for at least 4 hours to give it time to soften.
In a large bowl combine 10 ounces of spring mix, cubed mango, diced avocado, candied almonds, Feta cheese, and pickled sweet onion. Drizzle with poppy seed dressing and mix.

- In a small bowl, combine sliced sweet onion, apple cider vinegar, sugar, salt and boiled water. Set aside for at least 4 hours.
- In a large bowl combine spring mix, cubed mango, diced avocado, candied almonds, Feta cheese, and pickled white onion. Drizzle with poppy seed dressing and mix.
