I love cooking pasta dishes. I feel like you can trow in any vegetable or protein, mix it with a delicious sauce and voila! Perfect dinner ready in minutes! I always make sure that my pasta dishes come with a punch of flavour and I have had people ask me how I make my pasta taste so flavorful.
Most cookbooks and recipes will tell you to mix the sauce with pasta and serve… now you will have to break this habit and have about 2 minutes of patience before you dig in… Here’s my simple technique…with delicious results…
Under-cook past for 1 minute. For example, if the package directions tell you to cook it for 8 minutes, cook for only 7 minutes. Drain the pasta, now I like to leave a little bit of water in the pot, so you don’t have to make sure that the last drop escapes the colander. Return pasta back into the pot and add the sauce. Mix to combine and cover with lid. Turn the heat down to low and simmer for 1 minute. Remove from heat and let it sit covered for another minute or two. Mix again before serving. This allows pasta to really soak in the sauce and bring the flavor to another level.
I don’t know about you, but I like to keep store bought sauces in my cupboard just in case. The only thing about that is I don’t like the taste of store-bought sauces. I find that mixing in minced garlic, fresh herbs or a little bit of heavy cream will go a long way. It gives the sauce a new life and makes it taste fresher and more flavorful. I typically don’t stop here, I am a huge cheese fan so if I have cheeses that melt nicely, such as Monsieur, Havarti, Parmesan, Romano, etc., they end up in a sauce too… now I know what you’re thinking… Calories, calories… but sometimes it’s ok to give up calories for flavor 🙂
